How to Store Imported Cheese

Keep cheese in the refrigerator
Imported cheese sold at Continental Gourmet Store should go into the fridge promptly after delivery or after you leave Old Palasia. Summer temperatures in Indore are not safe for a soft or blue cheese sitting out.
Wrapping after you open a pack
Leave factory seals intact until you need the cheese. After opening, rewrap so the cheese can breathe a little and does not dry out or pick up fridge smells.
- Hard cheeses such as cheddar and Red Leicester — wax paper or a cheese wrap, then a loose bag
- Feta — keep it in its brine if the pack has brine; otherwise a sealed container
- Blue cheese — wrap separately so the aroma does not move into other foods
- Bocconcini — stay in the original liquid and use soon after opening
- Cream cheese — sealed tub, lid on, use a clean spoon
When to use it
Follow the date on the pack. If the cheese smells sharply of ammonia, shows unexpected colour, or the texture has collapsed, do not use it. Ask in store if you are unsure how a new pack should look.
